- Nutr 100: Contemporary Nutrition Concerns (3 credits)
- Nutr 251: Introductory Principles of Nutrition (3 credits)
- Nutr 358: Assessment of Nutritional Status (2 credits)
- Nutr 490W: Nutrition Seminar (3 credit writing intensive course)
- Nutr 456: Community Nutrition (3 credits)
- Excellent communication and teaching skills
- Ability to work independently and as part of a team
